Jelly Oat Bites
These Jelly Oat Bites are super quick and healthy. These will satisfy your sweet tooth without a doubt!
Ingredients:
3 tbsp (24g) PBFit Peanut Butter Powder
3 tbsp (44g) Water
1/2 tsp (2g) Baking Powder
1/3 cup (30g) Oats, preferably quick oats
1 tbsp (15ml) Sugar Free Maple Syrup (I use Maple Grove farms)
4 frozen strawberries
1-2 tbsp (10-20g) 0 calorie sweetener
Directions:
Step#1:
Start by combining the peanut butter powder and water and mix until you reach a creamy consistency.
Step#2:
Add in the baking powder, oats, and sugar free syrup to the peanut butter mixture and mix well until it forms a dough like consistency. (quick oats tend to work best as they are smaller pieces that can easily mix into the dough.)
Step#3:
Roll your dough into 6 balls. Then, with your finger, press down on each ball, creating a cookie with a little bowl in it. (this hole will be filled with jelly).
Step #4:
In a separate bowl take your strawberries and sweetener. Microwave these for 3 minutes, then mash and stir them to get a nice jelly like consistency.
Step #5:
Fill each of the oat bites with a small spoonful of jelly.
Step #6
Bake the cookies at 350F for 10 minutes.
